My main goal in life is how to get my 3 year old and 4 year old boys to eat dinner!  Honest to God!  It is like a bad movie that gets replayed day after day after day….and it is called “How to Get My Boys To Eat Dinner”!  Last year I realized they like…scratch that…they love, meat on a stick.  You name it… steak on a stick, chicken on a stick, shrimp on a stick, kabobs, etc..!  Who would have ever thought all I needed to do is slap some meat on a stick and call it ITALIAN GROUND TURKEY SKEWERS and all my dinner nightmares would be over!

ITALIAN MEAT SKEWERS

I came up with these ITALIAN GROUND TURKEY SKEWERS so that I could make something fast and healthy for my kids for dinner.  Guess what!?!?  They loved them!  It is a simple recipe that combines lean ground turkey, Italian spices and a little grated onion for flavor and moisture. They are a healthy version of meatballs minus the breadcrumbs, eggs and cheese. I served these ITALIAN GROUND TURKEY SKEWERS with a helping of my Mediterranean Quinoa (recipe to come) along with a side of my Blood Orange Salsa . My kids basically licked their plates clean! 

 

ITALIAN GROUND TURKEY SKEWERS
Serves 8
A mixture of lean ground turkey, Italian spices and grated onion...a healthy meatball on a stick!

Ingredients
  1. 2 pounds lean ground turkey
  2. 3 tablespoons grated onion
  3. 3 garlic cloves, minced
  4. 1 tablespoon tomato paste
  5. 1 teaspoon dried oregano
  6. 1 tablespoon dried basil
  7. 2 tablespoons chopped fresh Italian parsley
  8. 1/2 teaspoon kosher salt
  9. ground pepper and crushed red pepper
  10. Pam Spray
  11. 12 inch skewers
Instructions
  1. In a large bowl combine all ingredients. Mix well to combine.
  2. Divide turkey mixture into 8 equal portions. Shape each portion into an oblong patty.
  3. Spray skewers with pam spray. Skewer each patty with a skewer lengthwise.
At this point you can cook them two ways
  1. 1. Pre-heat an outdoor or indoor grill. Grill on each side for about 5-7 minutes depending on the heat element. Make sure inner part of turkey patties are completely done.
  2. 2. You can preheat the oven to 350 degrees. Place a wire rack over a baking sheet. Spray the wire rack with Pam spray. Place meat skewers on wire rack.
  3. Bake in oven for about twenty minutes. If you have a "convection" oven there is no need to flip them, but if using a regular oven you will have to flip them about 1/2 way.
  4. Serve & Enjoy!
